I cracked open a random cook book last week and made these Snickerdoodle Bars and they were so good! I love a homemade cookie, but sometimes I don't have time to be watching the oven in 8 minute increments. These hit the spot! Here's what you'll need:
Snickerdoodle Bars 2 2/3 C flour 2 t baking soda 1 t salt 2 C packed brown sugar 1 C butter, at room temperature 2 eggs, at room temperature 1 TB vanilla For Topping: 2 TB sugar 2 t cinnamon Preheat oven to 350 degrees and light grease a 9x13 baking pan. In a large mixing bowl, mix together the butter and brown sugar, then mix in the eggs, one at a time. Add vanilla. Add in baking soda, salt and flour, while mixing. Mix until blended. Then spread evenly into the 9x13 pan. In a small bowl, combine the sugar and cinnamon, then sprinkle on top of the batter. Back at 350 degrees fro 25-30 minutes or until the edges begin to lightly brown. Remove from oven and let cool on a cooling rack. Cut into squares and serve.
