5 Summer Recipes + Weekend Open Houses

Our spring and early summer was so cool this year, that we didn’t ‘officially’ open the pool until Memorial Day…and even then it was a little touch and go.  We are typically well into 100 degrees by that point and this year, well the high was a cool 78.  We proceeded with our typical Memorial Day plans, grilling poolside.

I tend to be a creature of habit and pull from my tried and true favorites, but this year, instead of the same ol’ same ol’ I made all new recipes.  Four of them to be exact and they were all off the charts and immediately added to my stack of tried and true.  I snapped pics of most of them, and thought I’d link them up for you here today.

Spinach Cucumber Strawberry Salad -- This salad was so good and so easy!  Not a ton of chopping which made prep so easy!

Monkey Bread -- Scot found this recipe and it's a great weekend breakfast in the summer.  We love it on lazy mornings and the best part is my older kids can make it on their own.  #winning

Ranch Grilled Chicken -- With the weather so warm, I really try to avoid turning on my oven.  I hunted around a bit for some easy marinades...really it was mostly in an effort to not got to the store, and I found some gems.  We made the ranch one and I've got plans for the others as well.

​Creamed Corn -- I love a good side dish but love an EASY good side dish even more.  This was incredible on it's own, or to dip tortilla chips in. YUM.

Rolo Cookie Bar -- I've made the executive decision to make cookie bars more often, mostly because they are equally delicious but much less time consuming.  This Rolo Cookie Bar whipped up in a snap and was devoured just as quick.  This photo was before I added the cookie dough to the top.

Real Estate Open House
Every year after the holidays have wrapped up and life begins to move forward, I begin to feel the pull towards more simple living.  Easy dinners on the patio (because we can do that in January in Arizona) and the return of simple routines that got overshadowed in December, but that ground me in January.  It never disappoints to rejuvenate my soul and motivate me to do a little better, be a little kinder.

5 things this week: 

1.  Have you watched Dumplin' yet on Netflix?  It's a cute, quick coming-of-age movie, with a Dolly Parton sound track.  Turn it on the next time you're folding laundry.  You want be embarrassed when your kids walk in and start watching it with you. 

2. I'm obsessed with these ladylike leopard flats. When I had Luke, my feet grew half a size (grrr) which hasn't been overly problematic, but I've been missing my leopard flats that became just a touch too small after he was born.  

3. My kids went back to school this week and I had high hopes for my gym time getting back on track.  Turns out only 2/3 went back to school the first three days of the week.  You can guess how my work outs went.  If you're still struggling to get back into your routine post holidays...me too girl, me too.

4. I came across this site a few years ago and haven't been able to quit it. It's a collection of images from a community of photographers and get this...you can download the images and print them for FREE!  No joke.  High quality and a huge variety. I've printed more than a few for my house.

​5. My Real Estate 101 Course is in less than a week and I'm giddy with excitement, mostly because I can't wait for this group to blow their own minds this year.  It's sure to be a good time.

I came across this image on Pinterest and it stopped me in my tracks.  As I walk home after home, I'm beginning to see the return of warmth to our spaces and I am LOVING IT!  Also loving the built-in furniture style pieces that are popping into homes more and more. This bathroom strikes a beautiful balance.  Taking note for when we re-do our builder grade bathroom down the road. 

5 things on my mind this week:

​1. You all know I love to read.  Came across this great list from Janssen at Everyday Reading.  Not sure I'll make it through the ENTIRE list this year, but will definitely be pulling some good reads from this.  Ordered the first book today!

2.  This is so silly, but one of my favorite gift this Christmas was a new phone case.  The hype around the Loopy cases is legit.  Best idea. Best case.  Can't live without it.  In the event you need a laugh today, let me tell you what happened to my old case.  It was a Kate Spade one that had water in it, I liked it because it was super thick and sturdy. Unbeknownst to me, the liquid had started leaking out.  Scot noticed it one day as I was out the door, asking me what was all over the butt of my black jeans.  I went to change and try to figure out what in the world it was, when I realized it smelled like lighter fluid.  I thought of the last time the lighter fluid was out, and of course, it involved my oldest and his friends lighting a bonfire in our backyard.  Naturally, I assumed he spilled some on the patio furniture, which I then must have sat it.  So he got an earful.  A week later, after I had already wiped everything down, my pants had the same mark on the butt...suddenly it dawned on me that the liquid was from my dang phone case!  I had to apologize to Zack, but in all honesty though, I was really asking myself, what parent let's 11-year-olds have lighter fluid?  Apparently me.

3.  Got my hands on some new artwork for above our family room couch.  We've had a gallery wall the last couple of years, but the frames ALWAYS look crooked.  Despite my efforts to tape down the corners, a door gets slammed & the light shifts & suddenly I'm standing at my kitchen sink squinting at the frames in utter annoyance.  So down they are coming & we'll scatter them throughout the house in other areas.  Replacing them with, and I'm LITERALLY SO EXCITED, an oversize print from my friend Jenny's shop, Juniper Print Shop.  This has been such a labor of love for her & guys, I can't tell you how incredible it is.  She's figured out oversize art at an affordable price and I've been doing the happy dance ever since.  The paper is absolutely  INCREDIBLE!!  Smooth as butter and it doesn't glare so you can hang it with or without glass!  Go check it out, she walks you through all the details.

4.  Pushing hard to get myself back into my morning routine that involves a 5 am wake up call, followed by getting dressed.  It's not going as well as I'd hoped and while I know once school gets going, I'll be forced into it, I'm missing that consistent wake up time.  It really sets a great tone to my day & I've been missing that! 

5.  This winter season I've found myself wearing the same version of 1 outfit over and over.  It involves my favorite $25 jeans, a cropped, cozy sweatshirt and sneakers.  Like, I can't quit it.  If I want to get real fancy, I might wear some loafers instead of sneakers.

I've been mapping out a large gallery wall for our newly renovated entry way, so naturally I had to pull some inspiration from Pinterest.  You can see all the gallery walls I was loving here.

We've moved every single person's bedroom around with this renovation as well -- I'm pretty sure this is why they say renos aren't for the faint of heart.  One space includes a shared room -- which I love.  Currently my two sharing have bunk beds, which we needed in our old house because the shared bedroom was lacking in size. In this new space though, the bunks aren't needed & while my top-bunk sleeper will be sad, soon I'm hoping to have side-by-side twin beds, kind of like these.  You can see all my inspo ideas for shared spaces here.
